Terroir
The southern slopes of the hillsides reserved for the appellation have a combination of light, stony clay-limestone soils.
Weather
Natural protections, which surround the appellation area on three sides, limit maritime influences and give it a climate between the ocean and the Mediterranean.
Grape varieties
Crémant de Limoux: Chardonnay (30% minimum) Chenin (10% minimum), Chardonnay + Chenin (90% maximum). Additional varietals: Mauzac + Pinot Noir (40% max), Mauzac (20% max)
Limoux blanc (still wine): Mauzac, Chardonnay, Chenin.
